Summer Quinoa Tabbouleh

And so begins the season for cold salads. My favorites are most often thrown together with whatever is in my fridge; fresh tomato, onion, herbs, lemon and whatever else happens to be in there. Keep it simple or get creative by adding whatever other fresh veggies happen to be in your fridge.

Ingredients:

1/2 cup quinoa, cooked according to package directions

1 tomato

1/2 cucumber

3 scallions

1 cup parsley

juice from a 1/2 a lemon (or more if your lemon is whimpy)

Directions:

Chop all ingredients and add to cooked quinoa. Add the lemon juice, salt and pepper to taste, and toss.
