Grilled Portobello & Peach Burgers

During the summer, I find myself grilling almost every night. I can't get enough grilled fruit and veggies, most especially grilled peaches!

Throw just about anything on the grill and it's pretty much guarenteed it's going to be good. I find the most successful of my grilled meals are those that keep it simple. This recipe does just that, allowing you to enjoy and appreciate the flavors of the last of this summer's crop.

Burger Ingredients: * 2 portobello mushrooms * 2 peaches * 2 burger buns of your choice (I sometimes skip the bun and just eat it open-faced) * handfull fresh pea sprouts * 2 small tomatoes, sliced * fresh thyme * olive oil * salt & pepper Marinade Ingredients: * 3 tbsp olive oil * 1 fresh rosemary sprigs * 1 tsp fresh thyme * 1 garlic clove * juice from a 1/2 lemon * salt & pepper Guacamole Ingredients: * 2 avocados * 2 small tomatoes * 1/4 cup parsley * juice from a 1/2 lemon * 1/2 tbsp olive oil Directions: Clean the portobello mushrooms, cut the peaches in halves and remove the pits. To make the marinade, pour olive oil in a small bowl. Add one chopped rosemary sprig, chopped thyme, mashed garlic, freshly squeezed lemon juice and salt and pepper to taste and stir. Brush the mushrooms and peaches with the marinade.

Next, make the guacamole. Chop avocados, tomatoes and parsley roughly. Add them to a small bowl. Squeeze lemon juice over it, and mash.

Grill the portobello and peaches for about 3 to 4 minutes on each side. Toast the buns if you would prefer. Then place a big dollop of guacamole on the bottom bun, and add pea sprouts, tomatoes, one portobello mushroom and two peach halves. Add the top of the bun, and mush it together. Enjoy!
